It is a type of soba called Tartary buckwheat that is actively cultivated in the highlands of China's Yunnan and Sichuan provinces, Mongolia, Nepal, and Russia.
The origin of the name dates back to around 1840, when a German botanist gave it the scientific name ``Tartakurim''. This word refers to a Tatar tribe, and in China the tribe was called "Tartary" (Tartary), so it came to be called "Tartary Soba".
Tartary buckwheat buckwheat noodles are different from the regular buckwheat variety that is widely grown in Japan, including the color and taste of the buckwheat flour, but the most notable feature is the amount of rutin it contains.
Tartary buckwheat contains approximately 100 times more rutin than regular buckwheat, and rutin, also known as vitamin P, is the source of many soba tea fans.
